Vegetarian Mixed Vegetable Soup

One of my parents’ best dishes is Nilagang Baboy or Baka (Tender Boiled Pork or Beef Soup) I remember the days when my sister and I would eat the dish with 3 to 5 cups of white rice. Those were the days that eating this dish during monsoon months was the best.

Ten months ago I changed my diet to Vegetarianism. Some days when I am very free, hungry and craving for something, I would recreate a carnivorous food into herbivorous diet. I just remove the meat in the original dish and you have a perfect vegetarian food.

This Nilagang Gulay (Tender Boiled Vegetable Soup) is very easy to cook. In fact you are just literally boiling the vegetables like what most Chinese Vegetable Soups.

Here are the Ingredients:

  • Cabbage
  • Sweet Corn
  • Potatoes
  • Pumpkin
  • Xiao Bai Cai / Chinese Cabbage
  • Salt
  • Pepper

Remember to add more vegetables that you love to eat! Enjoy!
